It is the end of another week. Thank God it is Friday.
Have you had a chance to unwind and settle yourself into a comfy sofa to watch TV, with your fingers wrapped around your choice drink?
Or are you burping your baby, changing pampers or breastfeeding?
You might be rustling up dinner for your family or for yourself.
For me, I just tried a new banana sponge recipe with my own twist. I added crushed Pistachio nuts and a few mango slices. I whisked the banana, mango, egg and a dash of milk together and added the mixture to the cake mix. Almond nuts on the top half of the cake is my idea of a nutty garnish. Lol!
My cake mixer broke last week, so I whisked (with an egg whisk) the butter and castor sugar instead. There's always a way out!
The cake is looking fabulous in the oven. I have never tried this recipe. But if it tastes as scrumptious and moist as I expect, this will become my favourite.
After bouncing around the trampoline with their friends, my children are tossing balloons in the hallway, while I sit cross-legged in the kitchen waiting for my cake to bake to perfection.

My Friday was not so good. Didn't feel well and spent the morning in bed. Missed writing like you wouldn't believe and being on the internet with all my friends. Determined to have a better Saturday!

Wish I could sink my teeth into that yummy cake, Stella. My Friday was spent on the office as usual. Got home around 7.30pm because I had to wait for hubby to pick me up. When I got home the area was in darkness as there's power rationing in Ghana. So angry and bored. Slept early!

The banana sponge cake with my own twist tastes so scrumptious and moist, better than the Victorian sponge I had always baked.

Ouch! Celestine, I know how awful it feels not to have light after getting home late from work - utterly frustrating! About eights years ago, when I was in Nigeria, my routine was to shower, have a late dinner with hubby and knock off to bed, in the dark. I hope you have an enjoyable weekend.
I pray that one day, Africa will be blessed with 24h electricity.
